Baked Sweet Potato Cubes with Cinnamon & Vanilla

They also have potassium, dietary fiber, niacin, vitamin B1, vitamin B2, and phosphorus. However, when most individuals hear the word potato, they instantly think of the dreaded word “CARBS” but sweet potatoes only have 23g of carbs whereas white potatoes have 26g of carbs. 2 – 3 large sweet potatoes, peeled and cut into cubes
1/4 cup extra-virgin olive oil or coconut oil
1 1/2 tablespoon ground cinnamon
1 teaspoon vanilla extract
Preheat oven to 400 degrees F
Mix olive oil (or coconut oil), cinnamon and vanilla extract with sweet potatoes in a mixing bowl.
Spray baking sheet with cooking spray
Lay sweet potatoes out in a single layer on a baking sheet and bake for 30 minutes
