Baked Tilapia with Mango Salsa Recipe

Baked Tilapia with Mango Salsa

Baked Tilapia

  • 1/3 cup Extra Virgin Olive oil

  • 2 tablespoons lemon juice

  • 2 tablespoons parsley

  • 1 clove garlic, minced

  • 1 teaspoon dried basil

  • 1 teaspoon black pepper

  • 1/2 teaspoon salt

  • 4 tilapia fillets

Mango Salsa

  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons lime juice
  • 1 tablespoon lemon juice
  • salt and pepper

Directions

  1. Mix the following ingredients together and allow the tilapia to marinate in the mixture for at least 1 – 2 hours:
    • Olive oil
    • Lemon juice
    • Parsley
    • Garlic
    • Basil
    • Pepper
    • Salt 
  2. Wrap each piece of tilapia in aluminum foil and place in oven for 5 – 7 minutes at 400 degrees F. You will know the fish is finished when it is no longer “clear” in the middle.
  3. Prepare the mango salsa by mixing the following:
    • Diced mango
    • Red bell pepper
    • Red onion
    • Cilantro
    • Jalapeno pepper
    • Lime juice
    • Lemon juice
    • Salt and pepper
    • BONUS TIP: The salsa will have more flavor if you allow it to set at least 1-2 hours before serving.
